Yes, you read right!

Sometimes you just want something sweet and yummy to start your day. Screw being responsible for breakfast! We.Want.Cookies!

Huh? Did we just write that? No, we never have cookies for breakfast…(insert guilty look here).

Alright, time to fess up. Girl Scout cookies are notoriously THE JAM. When the sweet, little, uniformed, crack-pushing kiddies come to our doors, we metaphorically yank their pig-tails until they hand over the Thin Mints.

It is impossible for us to not finish an entire sleeve of the cool, crunchy cookie. Have you ever had just one? Needless to say, we were elated when we came across nutritional genius, Michael Van Straten’s “Mock Mint Choc” recipe.  This smoothie has served as breakfast, post workout snack and dessert for us… and it never ceases to satisfy that craving for something chocolate. Peace out, girl scouts.

MOCK MINT CHOC by Michael van Straten (seriously, check out his books…)

Mint – 6 leaves

Brazil nuts – 5, shelled

Almond or Skim Milk – 10 oz

Yogurt – 5 oz live, low-fat

Honey – 1 tablespoon

Carob powder or Cacao powder– 2 tablespoons (Cacao is great for a breakfast smoothie given it’s natural caffeine content)

In a blender add the Brazil nuts FIRST and blend until powdery, then add the rest of the ingredients and blend until smooth!

Loaded with calcium, selenium, protein and potassium, this super smoothie will keep your cravings at bay and your body nourished! Perfect for breakfast, pre or post workout, dessert or any time you’re craving something sweet and minty. Cute little cookie-pushers, be damned!
