HEALTHY HANUKKAH POTATO LATKES

Crispy and delicious!

Latkes: the ultimate comfort food and something we have a huge weakness for. We wanted to be able to munch on these puppies for more than a week, so we mixed up a healthy – but still authentic (just like grandma’s!) version, that can be whipped up at any time. Try these bad boys for breakfast; they might just replace your Saturday morning pancake.

The key to our recipe is organic ingredients and coconut oil. Organic really does make a difference (no yucky, cancer causing pesticides) and the coconut oil is incredibly healthy for you! Skip the sour cream and just go with some organic applesauce.

HEALTHY HANUKKAH (or all year round) POTATO LATKES

  • 2 large organic potatoes, peeled and coarsely grated
  • 1 small organic onion, grated
  • 1 teaspoon lemon juice
  • 2 organic eggs
  • Coconut Oil
  • 1 1/2 teaspoon all-purpose organic whole wheat flour or a gluten-free flour like coconut flour.
  • Sea salt and pepper to taste
  • Organic applesauce

Grate the potatoes and try to remove as much water as possible. In a large bowl, combine potatoes, onion, lemon juice, eggs and 1 tablespoon of the coconut oil (you may need to warm the coconut oil to liquefy it).  Mix well. Blend in flour.  Season with sea salt and pepper to taste.  Mix thoroughly.

In large heavy skillet, add a couple of tablespoons of coconut oil and heat oil to be hot.  Spoon the potato mixture into hot oil.

Brown on both sides, turning only once.  Drain on paper towels.  Serve immediately with applesauce!
